I. The Founder's Origin: The Pain of No Sashimi.

Our journey began when we relocated to Thailand. Our son, who adored sashimi in Japan, faced the harsh reality that quality sashimi simply did not exist here. The frozen fish sold in shopping malls was substandard and unsuitable for a Japanese palate. This heartfelt family wish drove us to venture into Thai waters, catch fish ourselves, and discover their extraordinary potential.

II. Scientific Freshness: Flash-Freezing that Preserves K-Value.

Conventional freezing allows water to expand in the critical -1°C to -5°C ice crystal zone, rupturing fish cells and causing umami-rich drip loss — resulting in spongy, flavorless sashimi after thawing. GYOTAK employs rapid flash-freeze technology that passes through this danger zone instantaneously, minimizing ice crystals and preserving the K-value freshness indicator for long-term storage.

We partner with cold-chain logistics providers maintaining temperatures below -15°C, with dry ice in every shipment. Our facility adheres to Japanese-standard hygiene with purified water, comprehensive Vibrio parahaemolyticus prevention, and definitive Anisakis elimination through flash-freezing.
